ROYAL ICING 101

The Live class will take place on Thursday May 20 at 20h (8pm) Paris Time. The Live video will remain in the group after the class to be watched at your convenience.

This class will cover everything you need to know in order to master Royal Icing consistencies. No physical products will be provided. You will have to source your own materials:

 

- Egg whites (dry or liquid), OR meringue powder

- Powder sugar (confectioners sugar)

- Lemon juice

- Your flavoring of choice

- Cream of tartar (optional)

- Water

- Gel food colors (optional)

- Piping bags (tipless or with tips and couplers)

- Baked cookies in any shape, OR parchment paper to practice

- Mixer (stand or hand mixer is ok), mixing bowl, spatula, one tall glass or tumbler, bag clips or rubber bands

- Spray bottle filled with water (optional but nice to have)

 

During this class, I will make royal icing from scratch using dehydrated egg whites, and I will explain the slight differences when using other products such as meringue powder and liquid egg whites. We will work on recognizing 4 main icing consistencies on the bowl, learn how to tint and bag icing, and recognize how the different icing consistencies should look like on the cookie. I will teach you how to identify incorrect icing consistencies and how to fix them. We will do some basic piping practice and discuss topics such as over mixing, humidity, drying times, packaging and storage.

 

 

BASIC FLORAL COOKIES CLASS

The Live class will take place on Friday May 21 at 20h (8pm) Paris Time. The Live video will remain in the group after the class to be watched at your convenience.

This class will cover the step by step decoration of the 5 cookies shown in the picture. No physical products will be provided. You will have to source your own materials:

 

- Royal icing (basic recipe will be provided in the Facebook group)

- Cookies (basic recipe and cutting templates will be provided in the Facebook group)

- Gel food colors (to match the picture or to your choice)

- Piping bags (tipless or with tips and couplers)

- If using piping tips you will need #1, #2, #3, #352, #104


Before this class, I will do a short Live to go over the class materials and make sure everything you will need is crystal clear. This Live video will remain recorded in the group for your reference.

 

During this class, we will go over the basics of outlining, flooding, creating effects with wet-on-wet icing, creating dimension with puffy icing, and piping a flower with stiff icing. I will show you two ways of coating a cookie to make a branch, and two ways of making a flower leaf. We will discuss topics such as craters and how to avoid them or fix them, humidity and how it affects drying times and what we can do about it, cookie storage, and freezing.
